The blend is 95% Syrah with 5% Viognier, a white grape — the same pairing the northern Rhône permits in Côte-Rôtie, where a little Viognier is fermented together with the red fruit. Sula grow both in the Nashik Valley and list dark and red berries, vanilla, mocha and spice; their own pairing suggestions run to red curry and tandoori tikka.
